Our Ten House Specialties

All Good Americans Deserve The Right To Have Any And All Of The Following Libations Made To Perfection. All Of These Recreations Originated By Americans And Have Spread And Gained Notoriety Throughout The Drinking World.

I. Old Fashioned - Bourbon Based supposedly invented in the pendennis club in louisville, kentucky, for a kentucky colonel (and bourbon distiller) named james e. pepper. this origin was later disproved however it is certain that colonel pepper had strong ties in promoting this classic. in more recent years this simple yet tasty concoction was altered by adding orange slices, maraschino cherries & sometimes a pineapple slice. c&s pays respect to the past and agrees with crosby gaigel's stance in 1944. "serious-minded persons omit fruit salad from old fashioneds." we use weller reserve as the base   11.00
II. Mint Julep - Bourbon Based the ultimate deep south cocktail famously served at the kentucky derby. served with hand crushed ice, hand muddled mint in a tin cup. you have all heard of it, now its time to have it made right   12.00
III. Sophomoric Sazerac #2 - Rye Whiskey & Absinthe the quintessential new orleans classic whose key ingredient is peychaud's aromatic bitters. believed to be created in 1858 by a bartender named leon lamothe and initially with sazerac cognac rather than rye whiskey. later a combination of phylloxera aphid and the american civil war made cognac hard to obtain and it was switched to rye whiskey. this is our house "bastardized" version of the original using an american hibiscus liqueur and of course american old overholt rye   12.00
IV. Manhattan - Rye Whiskey Based the origins of the manhattan, like so many cocktails are lost in time, however, we are almost certain that when invented in manhattan in the late 1800s it was made with rye rather than bourbon. the manhattan is crafted with old overholt and our house-made sweet vermouth exclusively available at c&s   11.00

V. Martinez Or Martini - Gin Or Vodka Based perhaps the most iconic of all cocktails whose origin is continuously disputed and shrouded in mystery. believed to be created around the turn of the last century, it was clearly made with gin and dry vermouth in various proportions. the martinez, thought to be, the forerunner of the martini consists of a sweet style of gin known as 'old tom' gin, sweet vermouth, orange liqueur and orange bitters. martinez, c&s martini-leopold's gin & our house-made white vermouth   11.00

VI. Aviator - Gin Based created by head bartender, hugo ensslin, at the hotel wallick in new york at the turn of the century. the original calls for luxardo maraschino italian liqueur and a dash of violet liqueur. neither of these spirits are of us origin so we had to apply some creative substitutions, dubbing our all american version the chuck yeager   12.00
VII. Mai Tai - Rum Based created in 1944 by victor jules bergeron or trader vic as he became known as in oakland san francisco. the name was adopted from the tahitian expression "mai tai roa ae" meaning 'out of this world-the best'   12.00
VIII. Daiquiri - Rum Based invented in 1896 by american engineer jennings. cox. who was working in a cuban copper mine. the daiquiri came to america by us admiral lucius johnson who fought in the spanish-american war. he introduced the drink to the army & navy club here in the nation’s capitol. the original recipe specified bacardi carta blanca which is now know as bacardi superior-still made using the same strain of cultured yeast. the daiquiri is a wonderfully simple recipe, just calling for rum, lime and sugar. however, they combine so complexly that subtle variations dramatically affect the character of the finished drink". s. difford. the c&s version adds honey and a dash of house-made grenadine.   12.00
IX. Jack Rose - Calvados (Apple Brandy) a wonderful brandy sour sweetened with our house-made grenadine. a very silky drink largely forgotten because its deeply historic yet obscure base liquor   12.00
X. (Orange) Moscow Mule - Vodka Based born in 1941 in new york's chatham bar as a way to promote smirnoff vodka and a new ginger beer. our version incorporates american 4 orange floridian vodka   10.00
Collins created in the nineteenth century and originally based on gin, its origins are heavily debated-some claim london other claim new jersey or san francisco. you know what story we believe. choose your base spirit and we will mix the lemon juice, simple syrup & soda   10.00
Rickey created in washington d.c. circa 1900 in shoemaker's restaurant and named after colonel joe rickey. similar to a collins but with lime juice. choose your base spirit and we will mix the lime juice, simple syrup & soda   10.00
